Being a first time mommy has been full of learning experiences for me. One of the hardest things I have found is saying no to my son. On the one hand, I <b>DO NOT</b> want to create a little spoiled monster who grows up getting anything and everything he wants. On the other hand he is so dang cute and sweet and when he flashes me that adorable smile, tilts his head and says "peeese mommy", how can I possible be expected to stand my ground! Luckily at this point his major demands only include little hot wheel cars and specific addictions to specific foods. E needs at least 2 more hands to carry all of his favorite little cars. He tries so hard to balance as many as he can in his little hands and prop them against his chest and tummy. I'm convinced he is going to have arthritis by the age of 5 from contorting his little finger to manage holding 5 cars in one hand for hours at a time.</div>

And his second major demand is his love for food. He is such a ball of energy that I can understand a growing boy needing lots of yummy, healthy foods to fuel his body...but!...sometimes his need for certain food borderlines addiction. Seriously! No joke! I am convinced that if I gave him as many of these squeezable applesauces as he wanted that his stomach would pop before he decided to stop eating them. So consequently I have had to start limiting his consumption, and it has been hard for me to say no to my sweet little boy who loves his apple sauce so much! Plus, after doing a few calculations of how much money we actually spend on these little gems, which by the way are not cheap, I definitely knew it was time to scale back.</div>

That is when a tender little mercy appeared! After 8 years of stocking up on food storage in case of an emergency of any shape or size I thought it time to open the boxes and take an inventory of exactly what we had, how much longer it would last, and how I could start incorporating it into our meals. I was shocked to say the least at how much we actually had. But I was so thrilled when I saw how many #10 cans of dried apple chips there were! I new immediately what I was going to do with them! It couldn't have been more simple or quick to make. And it tasted even better, I might add, than any of the store bought options. Apple chips are sold almost everywhere now if you want to give it a whirl. Or in case you stocked up on too many during your last shopping trip or you have a hoard of them in your food storage like we do, give this recipe a try! Plus making your own applesauce allows you to add any flavors you want or nothing at all. Needless to say it will be a long time before I purchase store bought applesauce and I fear that Costco might go out of business when they start to realize the sales they are going to loose, from our family alone, when we stop buying their Go Go squeeze applesauce :)</div>

I love mushrooms and they have always reminded me of my father. Every time he eats mushrooms he always likes to make the statement that mushrooms are a good substitution for eating meat. He continues for a few minutes giving us all the ways you can replace mushrooms for meat and how satisfying it could be. He repeats this as if he has stated it for the first time in his life, when in actuality I hear it at least a dozen times a year :) Although mushrooms are meaty in texture I am not sure I could substitute my meat for mushrooms all the time. But, I do love mushrooms and especially stuffed ones.<br />

These mushrooms are so flavorful and packed full of really interesting flavors like tarragon, sun dried tomatoes, basil and cheese to name a few. And even though there is no meat incorporated into the stuffing, they sure are as satisfying and delicious as my good ol' dad says they are!<br />

1 pound mushrooms</div>
<div style="text-align: left;">
2 tablespoons olive oil</div>
<div style="text-align: left;">
salt and pepper</div>
<div style="text-align: left;">
1 small onion, diced</div>
<div style="text-align: left;">
2 cups finely chopped sun dried tomatoes</div>
<div style="text-align: left;">
4 garlic cloves, finely chopped</div>
<div style="text-align: left;">
1/2 cup Parmesan cheese</div>
<div style="text-align: left;">
1 1/2 tablespoons tarragon leaves</div>
<div style="text-align: left;">
4 tablespoons chopped basil leaves</div>
<div style="text-align: left;">
fresh mozzarella cheese</div>

Directions:</div>

Preheat your oven to 350 degrees. place your mushrooms with caps removed onto a baking sheet. Drizzle with olive oil and a little bit of slat and pepper. Bake for about 8-10 minutes if you are using small mushrooms. If using large portobello mushrooms bake for about 15 minutes. While mushrooms are cooking heat two tablespoons of olive oil in a pan and add the onions. Cooks on low heat for about 7 minutes, stirring every few minutes. Add garlic and sun dried tomatoes and cook for and additional few minutes. Remove from heat and let cool. Once cooled, add the Parmesan cheese, basil and tarragon. Taste for needed salt and pepper. </div>

Prepare pasta according to package directions, being sure to cook al dente. While pasta is cooking, melt butter and oil in skillet. Once oils are hot, add garlic and let cook for about 1 minute. Add red pepper flakes, stir, then add shrimp and cooked until just pink. Turn heat off and add the zest of one lemon, the juice of two, and parsley. Stir to combine and check for needed salt and pepper. Add cooked and drained pasta to your skillet, toss before plating and garnish with more parsley.</div>

I have always heard about brining meat and the wonders it does for flavor and texture but I have never been very interested in trying it. Im not sure what sparked my interest in it this week but I decided I would give it a try so I could either prove it wrong or become a believer. After cleaning up from our dinner meal for the night I simply put together my brine recipe and added my chicken and stuck it in the fridge for the following day. When it was time to start preparing dinner I simply removed my chicken breasts, rinsed them under water and stuck them on the grill. My husband, son and I sat at the dinner table each with chicken on our plate very anxious to dig in. Of course my son had already started attacking his food, but lets be honest, I couldn't use him as a gauge for whether the chicken was a success or not since I'm convinced he would eat just about anything. So my husband and I decided to slice off a piece and give it a try. The first thing that came to my mind was <i><b>"I will never prepare my chicken any other way."</b></i> Yes, thats right, it was a huge success, like big time! I had never had chicken so perfectly juicy and seasoned in my life. And heres the kicker...after taking my chicken out of the brine I put absolutely zero seasoning on it, zilch, nada, nothing! So all of the flavor I was tasting was coming strictly from the brine. 100% delicious, and it couldn't have been easier to throw together. Everyone has salt and water on hand and you can always play around with any of the other added ingredients. Give it a try, you might turn into a brining fanatic like me!!</div>

Ingredients:</div>

4 cups water</div>

4 tablespoons of grated or finely chopped red onion</div>

4 tablespoons salt</div>

5 cloves garlic, finely chopped</div>

2 sprigs of fresh rosemary or 1 heaping tablespoon of dried rosemary</div>

1 lemon, thinly sliced</div>

5 boneless, skinless chicken breasts</div>

Directions:</div>
Place the water and salt in a large tupperware container. Stir until salt is dissolved. Add onion, garlic, rosemary, lemon slices and your chicken breasts. Seal the container and place in your refrigerator for 24-48 hours. When ready to cook, run each of your chicken breast under cold water and pat dry. BBQ the chicken breasts until internal temperature reaches 165 degrees.</div>

Yes, its that time, the 2 year anniversary of my favorite headboard ever! I am such a lucky lady to have such a wonderful and handy husband. One day about a year ago I pointed to a photo of a wood headboard and said "I want this, can ya make it for me sweetie?!" Of course he could...and make it he did!! We had just pushed out our fence line in our back yarn and used new wooden boards to do so. That meant we had an incredible pile of old wooden planks that were already gorgeously aged. The timing could not have been better. Ben laid out the planks, made some cuts and voila, my favorite headboard was born. We recently had a Costco built very very close to our house. So close that it didn't make sense not to have a membership simply for reasons of proximity :) Having shopped there the past year I feel like I have learned a big lesson for my little family of 3. So when I ventured to Costco last month I thought nothing of buying a large bag of potatoes. After all potatoes last in a dark cool place for like forever...right! Wrong again! At least for me that is. I kept my hefty bag of potatoes in the garage to store and noticed one day that they had started to sprout through the bag! Holy cow, I hadn't even gone through half the bag!!! What was I going to do with all of these potatoes? I was determined not to have them end up in the trash with all of my other failed purchases. That's when Mexican roasted sweet potatoes came to be. They turned out to be so good that we had them all week and even invited family over to enjoy them with us.</div>

8 medium sweet potatoes, diced (I used half sweet and have russet)</div>

1/2 teaspoon salt plus more for sprinkling on top before roasting</div>

Preheat your oven to 400 degrees. Combine all of the ingredients except the potatoes and lime into a jar or in a deep bowl and mix thoroughly. Toss your potatoes in a bowl with the oil mixture and then transfer to a foil lined baking sheet. Sprinkle with salt and pepper.</div>

This recipe is a little play on Vietnamese rice. I used quinoa instead of rice and added some yummy shrimp. This dish is so great because you can add or subtract so many elements to make it something that your family will really enjoy. Instead of shrimp you can add chicken or even pork. And if you have some picky eaters in your house who wont come near cabbage with a ten foot pole you can always substitute snap peas or broccoli. There are a million possibilities. </div>

I didn't even miss having traditional rice in this dish. The quinoa compliments all of the ingredients very well and added a nice variation. In fact when I platted dinner for my husband and myself, Ben looked at his bowl and said "oh wow, this looks like something I'm gone like!" Place your shrimp into a large zip lock baggie along with the soy sauce, sesame seed oil, vinegar and ginger. Let marinate at least 30 minutes in fridge or longer. Place rinsed quinoa into a pot with vegetable or chicken broth and bring to a boil. Once a boil is reached turn the heat down to a simmer and cover with a lid for around 15 minutes or until all of the liquid is absorbed; set aside. Combine soy sauce, sugar and hot sauce in a small bowl and set aside. Mix together eggs with 1/4 teaspoon of salt. Heat cast iron skillet or wok over heat and add two tablespoons of oil and half of the onions. Pour in the eggs and cook swirling the eggs as you stir intermittently, until they have set, about 2 minutes. Transfer to a platter and set aside. Add your marinated shrimp and juice to hot pan and cook until pink and cooked; set aside. Add 2 tablespoons of oil to pan and add remaining onions and garlic. Cook stirring for a few seconds. Add cabbage and carrots and cook, stirring for about 3 minutes. Transfer to a platter. Add remaining 1 tablespoon of oil to the pan and add cooked quinoa. Stir for a few seconds and add soy sauce mixture. Add eggs, vegetables and shrimp. Before serving toss in fresh cilantro. Enjoy!</div>

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone mat. In a medium bowl, whisk together the oats, flour, baking soda, cinnamon, and salt. Set aside. In the bowl of a stand mixer, add the butter, Biscoff Spread, sugar, and brown sugar and beat on medium speed until smooth and creamy. Add the egg and vanilla extract and beat until smooth. Reduce the mixer speed to low and slowly add the dry ingredients, beating only until blended. Chill the dough 30 minutes in the refrigerator. Form the cookie dough into rounded tablespoons and place them 2 inches apart on the baking sheet. Bake for 8-10 minutes or until cookies are golden and just firm around the edges. Let the cookies cool on the baking sheet for 5 minutes and then remove with a spatula onto a cooling rack. Enjoy!</div>

Talk about a comforting sandwich! Good bread smothered with pesto, topped with bacon and wrapped up in a warm cheese blanket...say no more! In fact while making these for dinner I decided to whip out a couple extra just so that we would have some to eat for lunch the next couple of days. And boy am I glad I did, because one sandwich for dinner was not going to be enough for me! I needed to know that I had another one of these delicious indulgences waiting for me the next day!</div>

Directions:</div>

Cook your bacon until golden and slightly crisp, set aside on a paper towel to drain while you prepare your sandwiches. Lightly spread butter on the outside pieces of your bread. On each of the unbuttered sides of your bread slather a nice helping of pesto. Place a layer of mozzarella cheese down over the pesto, then 3 pieces of bacon on top of the cheese. Top with an additional layer of grated mozzarella. Place your remaining piece of bread over the cheese with the buttered side up. Heat a large pan over medium heat and cook your sandwich until a gold crust forms on the bread. Turn and repeat on the other side. Serve and enjoy!</div>

I dont know when my obsession with Oreo cookies began but once it started it has not ceased to exist even for a moment. I don't care how I eat them, dipped in cold milk, hot chocolate, in my ice cream or eaten right out of the package. I know I know Oreos aren't exactly figure friendly or considered a healthy treat but lets be honest...any good treat is gona be a little naughty, right?! Well naughty is exactly what this dessert bar is, and packed full of Oreo cookies...double stuffed to be exact. Turns out thats just what I ended up doing. I happened to order thai food one night for dinner and the food came in these perfectly sized, tall plastic containers with lids that were exactly the diameter of my candlesticks. How perfect was that! So I hot glued each base to the candle holder and filled those puppies with some favorite sweets! They have been a hit ever since!</div>

This last St. Patricks day I was searching for a new dessert that was either literally green or had a minty component to it. And thats about as far as our St. Patricks Day celebration goes in our family. Luckily I have Pinterest in my life and luckily there was a plethora of both green and minty desserts for the making. Thats when I stumbled across a dessert from <a href="http://picky-palate.com/" target="_blank">Picky Palate</a>, whose website is full of delicious food for the making. I read the recipe she had made for Minty Gooey Cake Bars and almost fell out of my seat. Holy decadent!! I almost got a cavity just reading the ingredients. That being said I knew it was going to be a winner of a recipe and one that I HAD to make for our upcoming St. Patricks Day. And of course I had to make it a bit early just to be sure that it was delicious….</div>

1 box yellow cake mix</div>

Preheat oven to 350 degrees and line a 9x13 inch baking dish with no stick cooking spray. Place cake mix, butter and egg into a large bowl; mix until dough forms. Press dough into bottom of prepared baking dish. Top evenly with chocolate chips and Andes mints. Drizzle sweetened milk over the top and top with broken pieces of mint cookies. </div>

Bake for 30-35 minutes, until baked through. I picked up a little bookshelf from a local thrift store to use in our house and after living with it for a few months I decided it needed a little sprucing up. I didn't want to paint the entire unit so I opted to try just painting the sliding doors.</div>

I was looking through my cabinets the other day for a snack for my son and found an economy size bag of dried figs that I had purchased from Costco months early and hadn't even used a 1/16 of. I wasn't sure E was going to go for the texture of the dried figs but I decided to try anyways. Turns out he has found another obsession aside from applesauce, bananas and watermelon. He has mowed through this bag with no trouble at all! In fact I have had to start regulating his fig intake so that his bowls don't spontaneously combust on me! As the bag was dwindling down I realized that if I wanted to use figs for anything I had better make my move before E finished them off. That was when my fig, proscuitto and kale grilled cheese made its appearance.</div>

This grilled cheese combines flavors that you might not ordinarily think of using together, but they work soooooo perfectly! Its both sweet with the dried figs and salty with the cured prosciutto. A perfect combination! And of course I had to throw a little healthy into the mix and what better way than to use some vitamin packed kale. My husband gave it a definite two thumbs up while licking his fingers. This recipe will definitely be making a debut on our monthly rotation for sure!</div>

Reserve about 5 figs per sandwich, depending on how large the bread is that you are using. Slice each of your figs into at least 4 thin slices; set aside. Prepare your bread by lightly spreading butter on the outside pieces. Place a layer of mozzarella cheese down on one of the un-buttered sides of your bread. Place your cut figs fairly close together on top of the cheese. You want to make sure that you get a piece of fig with every bite. Layer your proscuitto down next. Place a layer of kale down over the proscuitto and top with an additional layer of grated mozzarella. Place your remaining piece of bread over the cheese with the buttered side up. Heat a large pan over medium heat and cook your sandwich until a gold crust forms on the bread. Turn and repeat on the other side. Serve and enjoy!</div>

A few of you might be completely turned off by the name of this recipe, maybe even more than a few. In fact when I told my husband what we were having for dinner he thought I said turkey lard!!? What the heck is larb, you say? Larb is actually a type of Laotian meat salad that is regarded as the national dish of Laos. It is most often made with chicken, beef, duck, turkey, pork or even fish and flavored with fish sauce, lime juice and fresh herbs. The meat can either be raw or cooked (don't worry...the meat in this recipe is definitely cooked!). The bottom line is that the dish is incredibly fresh, flavorful, healthy and delicious!! </div>

For the dressing, whisk together all ingredients in a small bowl and set aside. </div>

For the larb heat oil in a large skillet over medium heat. Add onions, shallots, lemongrass, chili and salt to taste. Cook until the vegetables begin to soften, about 5 minutes. Add the turkey and season with salt. Cook, stirring frequently, until the meat and vegetables are cooked through, about 6 minutes. Add the dressing to the pan and cook for 2 minutes. Remove the pan from the heat and stir in the mint. Season with salt and pepper, to taste. Spoon turkey mixture onto the lettuce leaves and arrange onto a serving platter.</div>

Do you ever go to Costco during the holidays when they have the sample stand out, serving and selling that deliciously addicting popcorn?!!? There sits samples of cheddar, almond, zebra, and cinnamon white chocolate popcorn! Are you like me, trying not to act embarrassed as you walk up to the station for the 15th time grabbing another sample? Well I am tired of waiting for another holiday to come around before I can buy another months supply.....and now I don't ever have to wait again! This recipe is so close to Zebra Popcorn flavor that I might just open up a stand of my own and start selling it!<br />

12 Cups popcorn<br />
1/2 cup butter</div>

Preheat your oven to 250 degrees. Place popcorn in largest bowl you can find. You will need a large bowl with a little extra room so that you will be able to adequately incorporate the hot caramel and the popcorn. I actually split up my popcorn between two bowls.<br />
Melt butter in a large microwave safe bowl. Add in brown sugar and corn syrup and stir to combine. Microwave until you see bubbles start to form. Once bubbles form, continue to microwave for 3 minutes without stirring.<br />

Pour the mixture over your popcorn and stir until the popcorn is well coated. You will want to do this right away so that your caramel mixture does not become hard which will make it nearly impossible to then coat your popcorn. Spread your coated popcorn onto a baking sheet lined with parchment paper or a silpat. Remove your popcorn from the oven and let cool completely before drizzling with melted white and dark chocolate. Let your popcorn rest until the white and milk chocolate drizzle has hardened. I am completely impatient so I place my pan of popcorn in the refrigerator or freezer to harden faster. When cooled, brake into manageable pieces and serve right away or store in an air tight tupperware container until ready to eat.<br />

Babies babies babies; it seems everyone I know is having babies this year! Its fantastic and so exciting! A recent baby shower I was invited to had slipped my mind and I found myself the day before rushing to the store to pick up something quick and easy to give. I opted on a few cute summer/fall outfits for the little girl to be but was unsatisfied with the idea of simple wrapping the clothes in a garment box and presenting them to the soon to be mother. I wanted a more creative way to present the gift. Thats when I remembered a gift I give to all of my nieces and nephews on their 5th birthdays. I make them candy and toy bouquets. I attach their favorite candy and fun toys to wooden BBQ skews, wrap the skewers in green floral tape, stick the skewers into styrofoam that is placed in a heavy vase or pot and stuff in tissue and flowers to fill in the gaps. It really is a sight to be seen and almost a heartbreak to watch disassembled. </div>

For this occasion I decided to use the same technique just simply replace the candy and toys with the baby clothes and make a baby onesie bouquet. It is really really quite simple to be honest and took way less time than you would think. And the presentation and the expression on the mother to be's face is way worth any anxiety you may have of making this. </div>

Temperatures are cooling off and of course the dreaded cold/flu virus that seems to be unescapable finds its way into your house to wreak its havoc on any unexacting passerby. Thats exactly what has happen to my little family and the only thing that sounds good to my poor sickly husband is soup...italian wedding soup that is. And there is only one recipe that I turn to when making italian wedding soup...<a href="http://www.food.com/recipe/ina-gardens-italian-wedding-soup-447508" target="_blank">Ina Gartens</a>. This soup is dang good and seriously satisfying, especially on a cold winter day or in this instance on a sick day when all you want is a soothing, comforting bowl of soup to help heal your aches and pains.<br />

3 tablespoons milk</div>

1 large egg, beaten</div>

2 tablespoons olive oil</div>

10 cups chicken broth</div>

1/2 dry white wine (If you are uncomfortable cooking with wine you can substitute additional chicken broth)</div>

1 cup small shell pasta</div>
<div style="text-align: left;">
1/4 minced fresh dill</div>

8 ounces baby spinach</div>

Directions:<br />
Preheat oven to 350 degrees. To prepare your meatballs place ground meats, panko, garlic, parsley, parmesan, milk, egg, 1 teaspoon salt and 1/2 teaspoon pepper in a bowl and combine gently with a fork. Drop 1-inch meatballs onto a sheet pan lined with parchment paper; making about 40 meatballs. Bake for 30 minutes, until cooked through and lightly browned. Set aside.<br />

To prepare the soup heat olive oil over medium-low heat in a large stock pot. Add onion, carrots, and celery and sauté until softened, 5-6 minutes, stirring occasionally. Add the chicken broth and wine and bring to a boil. Add pasta to the simmering broth and cook an additional 6-8 minutes, until pasta is tender. Add the fresh dill and then the meatballs to the soup and simmer for 1 minute. Taste for salt and pepper. Stir in spinach and cook for 1 minute, until spinach is just wilted. Ladle into soup bowls and enjoy!<br />

When my niece was first born, almost 12 years ago, my aunt made a silhouette of her cut out of black paper and framed it. I was in awe!! It was incredible and I knew that once I had children I wanted to do the same thing. However, instead of using paper I decided to paint a silhouette onto a canvas using a profile shot. I blew up a side profile picture of my son , cut it out, traced it on the canvas and then painted within the lines. You can also paint the dead space black instead for a different look, use different colors or add details that might not have been in the picture; such as my husbands cowboy hat and my hair around my face (seen below)</div>

After I had finished painting I couldn't help but think that there was something missing.....something to make the silhouette painting a little more personal and whimsical. Turned out a crochet bow tie was just what my son needed around his little neck.</div>

These are really cute and simple ornaments that you can make to add to your Christmas ornament collection or give as gifts of present toppers to friends and family! Since we are still trying to build up our own family ornament stash I made two ornaments for both my sweet little boys this year. These are really fun to make and if you have children that are old enough to use a thread and needle, it can be a great family project too!</div>

Start by cuting out he shape and size of ornament you want. I used a plastic cup to cut circles for my ornaments. You will need two pieces of felt the same shape for each ornament you are making.</div>

With the color thread you choose start to make french knots in the spaces that you have traced on the felt until you have filled in the area completely. The next step isn't necessary but I decided to snip little holes evenly around the perimeter of the felt and do a simple single crochet with embroidery thread around the edge to finish it off.</div>

With your second piece of felt you will want to attach a piece of cut embroidery thread for your hook and attach it with hot glue.</div>
